Thanksgiving Specials: Sweet Potato Flan

Sweet Potato Flan by Nibbles and Feasts

Every year, I look for new recipes with Latin twists to try during the holidays. This year, I'm excited about this sweet potato flan recipe from Ericka at NibblesAndFeasts.com!

Sweet Potato Flan by Nibbles and Feasts

There are two things I like about this recipe. First, it can be made in advance. If you are like me, then Thanksgiving morning is a crazy day in the kitchen. This flan can be made a day or two in advance and kept in the fridge.

Second, you can sub canned sweet potatoes rather than cook them if you are pressed for time.

Ericka walks you through the recipe over here on her blog. So go print off the recipe and try something new this year!

What is Flan?

If you aren't familiar with flan, the best way I can describe it is that it's a luscious caramel-crowned custard. And its history as rich and diverse as its decadent flavor.

This dessert's roots can be traced back to the Roman Empire, where a dish called "tyropatinam" made with honey and milk served as a precursor to the modern flan. The concept traveled through medieval Europe and the Middle East, evolving into various custard-based sweets.

However, it wasn't until the spread of Moorish influence in Spain that the dish truly transformed into what we recognize as flan today. The Moors introduced the use of caramelized sugar, a key component that imparts the signature golden hue and rich taste to flan.

A typical flan dessert

Flan in the Americas

As explorers and settlers ventured to the Americas, they brought this sweet tradition with them. In Latin America, flan became a canvas for creative adaptations, blending indigenous ingredients with European culinary techniques. In fact, the dessert took on regional nuances, incorporating local flavors and textures.

Today, flan holds a cherished place in the hearts and tables of countless cultures, showcasing the global fusion of culinary influences. Whether served plain, infused with unique flavors, or paired with regional twists like sweet potato, flan continues to be a timeless and beloved treat that transcends borders and centuries.

Exploring Thanksgiving Flavors in Flan

While sweet potato flan is a delightful departure from the traditional pumpkin pie, there are even more Thanksgiving flavors to experiment with in this classic Latin American dessert.

Consider infusing your flan with the warm, aromatic essence of cinnamon and nutmeg for a holiday spice kick. Alternatively, try incorporating the rich, toasty notes of pecans or walnuts to add a satisfying crunch. For a citrusy twist, consider infusing the custard with orange or lime zest, providing a refreshing contrast to the sweet potato base.

These creative variations not only pay homage to Latin culinary traditions but also offer a unique and delicious spin on the classic flan, making your Thanksgiving celebration a truly memorable one.

What are Aguas Frescas?

Aguas frescas are refreshing beverages that have become an integral part of Mexican culinary and cultural heritage. Literally translating to "fresh waters," these drinks are typically made by blending fresh fruits, flowers, or seeds with water and a touch of sweetener. The result is a cool and revitalizing drink that captures the essence of the ingredients used. From the classic flavors like horchata and Jamaica to creative combinations featuring fruits like pineapple, watermelon, or mango, aguas frescas offer a delicious way to beat the heat and quench your thirst while immersing yourself in the vibrant flavors of Mexican cuisine.

Airfryer Strawberry Chimichangas

You guys know, I think, how much I love my airfryer. I've shared a few recipes here over the years, most with a twist on traditional dishes. And today, I have another one!

Air Fryer Strawberry Chimichangas

Are you ready to try something different this summer? It'll be an adventure. Who knows? It may these airfryer strawberry chimichangas may turn out to be your new favorites!

Tools You'll Need

Of course, you'll need an airfryer! Eight years ago, I got a Philips airfryer and it is still going strong! But I am probably in need of an upgrade because I really need a bigger one. Here's the airfryer I'm considering.

Ingredients

To make your strawberry chimis, you'll need:

  • 6 burrito-sized tortillas
  • 8 oz whipped cream cheese
  • 1 Tbs vanilla extract
  • 1 cup sliced strawberries
  • 1 cup Greek yogurt
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • toothpicks

Directions

Makes six chimis.

Preheat your airfryer to 350 degrees.

Slice your strawberries.

Then, in a mixing bowl, go ahead and combine them with the whipped cream cheese, vanilla extract, and Greek yogurt.

Divide the strawberry mixture evenly between the 6 tortillas and place a spoonful of the mixture in the center of each tortilla.

Roll up the tortilla and use a toothpick to hold it closed.

Lightly coat the chimis with melted butter and place them in the airfryer.

Air fry for five minutes or until the tortillas have turned a golden brown color.

Remove the toothpicks.

Roll each of the chimichangas in brown sugar (optional).

Serve and enjoy!

Air Fryer Churros Recipe

 Air Fryer Churros

Early in the morning, in most towns in Spain, las abuelitas gather in the town squares where they cook and sell their delicious churros. It's something that I miss most about Spain.

Air Fryer Churros

In the larger cities, you can find churros in the little cafés that are scattered throughout the city. I took the photo above in Zaragoza about five years ago. We were there for a wedding and my dad introduced my two older children to churros. I prefer to just dip my churros in sugar, but my kids went on a sugar overload and enjoyed dipping theirs in chocolate.

At any rate, when I saw this recipe for making churros in the air fryer of all things, I was intrigued. So I'm sharing the recipe here with you in case you are looking for a little adventure to enjoy with your children this holiday season. If you don't have an air fryer, scroll down for alternative ways to make churros!

Let me know how they turn out for you!

Air Fryer Churros

Prep time: 15 minutes

Cook time: 6-8 minutes

Tools:

Ingredients:

  • ½ + 2 tablespoons all-purpose flour
  • ½ cup water
  • ¼ cup unsalted butter
  • ¼ cup granulated sugar
  • 1 tbsp ground cinnamon
  • 2 eggs
  • ¼ tsp salt
  • Caramel sauce, optional
  • Chocolate sauce, optional

Instructions:

Air Fryer Churros

In a medium size pot, add your water, salt, and butter. Bring heat to medium and keep stirring with a wooden spoon, until all the butter is melted. Once melted reduce heat to low.

Air Fryer Churros

Add your flour and keep stirring, to keep the dough smooth, for about 3-5 minutes.

Air Fryer Churros

Add in your eggs one at the time, and make sure to immediately mix them in well. Remove from heat when the dough is smooth and thickened.

Air Fryer Churros

Put your piping bag in a glass, with the tip folded up, and add your dough to the piping bag. I used a larger churros tip.

Air Fryer Churros

Depending on the size of your airfryer, you might have to work in batches. Use a cooking spray to avoid sticking. Pipe and cut about 8 pieces of churros into your airfryer tray, make sure they have enough space in between. You can make them as long as you wish. I made mine about 1-2 inches long.

Cook the churros for 6-8 minutes (depending on the thickness of your churros) on 370 degrees Fahrenheit. And repeat until you’re out of dough.

Air Fryer Churros

While your churros are cooking, mix your cinnamon and sugar into a bowl (large enough for your churros).

Air Fryer Churros

Dip and roll each churro into the cinnamon sugar. If you like a thicker layer of cinnamon sugar, melt some additional butter and brush it onto the churros first, and then dip into the cinnamon sugar.

Serve warm with caramel or chocolate sauce, if you like.

Enjoy!

Actually, I have the double one, but I don't think they make it anymore. Now they just have the single and it's hard to catch in stock, but maybe you'll get lucky!

National Spanish Paella Day

Paella. © Can Stock Photo / Alex9500

Did you know that this Saturday - March 27th - is National Spanish Paella Day?

I have a profound love of paella. It comes from my dad's side of the family. As a child, when I would visit Spain, paella became one of my favorite dishes. I associate the flavor with beautiful memories.

So in honor of National Spanish Paella Day, I wanted to share a little bit of the history of this iconic dish.

Paella is a Spanish rice dish. Together with gazpacho, it is probably considered the national dish by many outside of the country. But this meal finds its roots in eastern Spain, and Spaniards all recognize it as being the official dish of Valencia. This city is of great importance to Spain due to its economic impact on the country. The Port of Valencia is the fifth busiest seaport in Europe and the busiest port in the Mediterranean. It employs 15,000 people who service more than 7,500 ships annually. All of this is important because of the trade goods that are imported (and exported) through this port. And one of those is saffron (more about that below).

Valencia is also Spain's leading rice producer. It was introduced to Spain by the Moors in 711. In fact, rice in Spanish is called "arroz" a word that finds its roots in Arabic ('arz), rather than Latin.

Originally, paella was a laborer's dish. Those who worked the rice fields cooked it in a wide pan over an open fire. These farmers would add whatever meats and vegetables they had available. The true original paella recipe used chicken or rabbit meat. Today, however, paella sprinkled with seafood - especially shrimp, octopus, and clams - is popular throughout the country.

The name paella itself is believed to come from the Valencian word for the unique shallow pan in which it is cooked. But there are many other lovely legends about where the dish got its name. (Challenge your kids to research it!)

Recipes are plentiful throughout Spain, but there are two main ingredients that identify it as being paella: the rice (of course) and saffron, the spice that gives it that unique yellow/golden appearance. In addition to chicken, rabbit, and seafood, other meats include sausage, and even duck. The chef may even go to great lengths to artfully arrange the dish before serving. Check out this example:

Since its beginning, however, this dish has been traditionally cooked and served outside, especially for large (family) gatherings.

Such a fantastic dish. Here are links to some fabulous recipes online:

Rosita's Strawberry Cream Cheese Tortilla Wraps

This is part of a sponsored collaboration with HBO and DiMe Media. However, all opinions expressed are my own.

In addition to bird watching this weekend, we're getting ready for our annual homeschool Valentine's Day party. Every year, we get together with other homeschoolers in our group to exchange cards and play super fun themed games. It's something we look forward to because it gives us an excuse to celebrate our friendships.

On Valentine's Day itself, I typically make homemade French toast for breakfast and place a card and little gift at my children's regular place at the dining room table. My kids rush off to make me handmade cards or crafts. It may be a Perler bead coaster in the shape of a heart, a sketch of one of our animals, a heart-shaped LEGO masterpiece, or a poem. I'll cook my kids' favorite meal and bake my husband's favorite dessert. We don't go crazy buying extravagant gifts, but prefer to give instead a heartfelt regalito just as an extra special way to show our love for each other.

Because love and friendship is what this life is all about, no? And that is why I love this little Sesame Street Valentine’s Day behind-the-scenes clip of Rosita teaching Abby how to say words of affection in Spanish in anticipation of Valentine’s Day. Even though my kids are older now, they still enjoy watching clips like this one from the show (they especially love watching parodies about movies and characters the love, like this one and this one).

A few years ago, I had the opportunity to interview Carmen Osbahr, the talented Latina behind the Rosita muppet. She is funny, vibrant, smart, and just as lovable as the characters she makes come alive on screen. And more importantly, she is making a difference in the lives of children all across the country - especially Latino children who have the opportunity to relate to and learn from the bilingual Rosita and Ovejita characters. I absolutely loved meeting her.

In fact, I have a little Rosita doll that sits on the headboard of my bed. She's frequently the first thing I see in the morning and a reminder of everything I love: children and education. My kids sometimes sneak into bed with me in the morning and reach out for her. Or if I am sick, they'll tuck her into bed with me to comfort me. They think it is fantastic that mama has a doll.

So in honor of Carmen and Rosita and Valentine's Day, I decided to make a special yummy (and healthy!) recipe to take with us to today's Valentine's Day party. The recipe is below...and don't miss the great giveaway from Sesame Street!! Be sure to tune in to watch your favorite characters on Saturday mornings at 9:00 am ET on HBO. They have a special Valentine's Day episode airing tomorrow morning that I know your kids will absolutely love.

How about you? How does your family celebrate Valentine's Day?

Rosita's Strawberry Cream Cheese Tortilla Wraps

Ingredients:
3-4 flour tortillas (burrito size)
1 tub of cream cheese (softened)
1 package of fresh strawberries

Directions:
First, thoroughly wash your strawberries and slice them up, discarding the tops.

Next, spread the cream cheese over one tortilla. Take your strawberry slices and arrange them on top of the cream cheese leaving an inch or so clear around the edges.

Starting at one end, tightly roll up the tortilla. Using a sharp knife, cut off the ends. Then cut the roll into sections, maybe an inch and a half wide or so.

Carefully arrange the sections on a plate and refrigerate for at least one hour before serving.
